I've been told that 1 or 3+ Root AD controllers should be
installed. There is a problem with placing only 2 on the
network. Can anyone explain why 2 is a problem?

Thanks-

I would ask the person who told you that to elaborate and
to back it up with some sort of documentation.

Technically, you can run AD on 1 DC all by itself.
However, if you want any sort of Redundancy then you
could/should install a second DC. End of story. I am not
aware of any requirement for 3+ DCs.
