How do I print to a file for uploading into Excel or word
later?

You will need to add a new printer - "Generic/Text Only" and then set
the port for that printer as "File".

If you use a regular printer to do this (e.g. an HP, Canon, Lexmark,
whatever) then the file created will not be usable in a spreadsheet or
word processor as it will consist of binary printer control codes.

The "Generic/Text Only" printer uses basic ASCII characters only so
the resulting files will contain no fonts, formatting, or graphics -
just the basic text.

Good luck
