When I have Outlook set to show the preview pane, am I actually OPENING the
message????? I am very careful NOT to open messages I don't know the
sender, but when I hover over a new message and see it in the preview and
the little envelope icon show open, have I actually opened it before I
delete it?

Effectively, yes. Certainly any malicious code in HTML could be activated
AFAIK. You are better off using View-Current View-Messages with Autopreview.
 
Using Outlook 2000 with all updates or above is very secure and no code can
be executed automatically. Outlook 2003 also blocks pictures by default so
the sender can't see if your address is alive by Internet pictures in the
message.
