I brought home a computer for work for my daughter to use
for homework. Currently, Windows 2000 Server Family
appears on the screen and it takes about 5-7 minutes to
boot up. The message on the screen is "preparing network
connections".

Well, I don't have a network and not even the internet.
Anyway to turn off some of the aspects of this program so
it doesn't take so long to load? If not, can I download
anything from Microsoft to replace this program?

Was the computer set up on a network at work? If so, the thing is probably
looking for drives and remote resources still in the user profiles.

I doubt your kid needs Win2K server for her homework, so how about
formatting it and installing Win2K Pro or Win9x?

A Windows server is way overkill for a kid's homework.

You just about answered your own question - it's looking for network
connections and resources it used to have access to. There are a lot of
services that would need to be stopped/reconfigured. It might suffice to
disable or remove the network card, but the real solution is get the kid
a machine suited to the task.
