Process is really simple:
Row#1 - Header Row. Each column contains the name of the field you want to
import (i.e. FullName, CompanyName etc). These names do not have to be
identical to those used by Outlook.
Rows2 thru x - contains the actual data for the contacts you want to import
with the "content" of each column matching what you set up in Row #1
Make sure you create a named range that covers the <row/columns> in BOTH the
header row and all detail rows the follow it. Info on how to create a named
range can be found in the Excel help file.
Import file into Outlook and manually map each field from your Excel sheet
to the appropriate Outlook field.
