It can be done!
* Go to the grayscale modus.
* Select the tables (or cells) you want with no border
* Go to Format-tab
* Choose shape fill --> no fill
The only downside ofcourse is that, if your table/cells did have a fill color, it will lose the fill color.

Grayscale options are now on the view tab.
Grayscale options are now on the view tab. But you should avoid printing
pure Black & White, all modern printers are capable for Grayscale

I really appreciate your reply Ute. I do print in grayscale, but the table
borders still print black. I have been in the grayscale view, but in 2007 it
no longer gives me the option to convert the selected table to grayscale.
I am hoping to find a way to keep the white borders white when
viewed/printed in grayscale

You're right. When you select a table, the grayscale options dim out and are
inaccessible
You might experiment with this
Select the tabl
Press Ctrl+C to copy i
On the Home tab, Clipboard group click the downarrow beneath Past
Choose Paste Special and pick EMF or WMF (experiment with both
You'll be able to adjust grayscale settings for the pasted picture
But the picture will no longer be a table; keep a copy of the original table
around in case you later need to edit it

and sooner rather than later!* I know the knowledge experts who respond her
