How can I make it complete the list? I've noticed that the smaller I make

The credits animation scrolls 1 screen height of text. If you have more
than that the animation will cut it off additional text (much like you have
described).
To resolve this, create several text boxes, each with a height limited to
the height of the slide. Apply the credits animation to all of the text
boxes. Select all the animations *except the first one* and change them to
start with previous. Add a delay to each of the additional text boxes. The
first animation delay should be 1/2 of the animation duration (default
animation duration is 15 seconds, so enter a 7.5 second delay on the first
additional text box); the second, 2/2 (or equal to) the animation duration;
the third, 3/2; and so on.
