Populating contact from sent items folder

Hi,

I have a few hundred contacts in a sent items folder and would like to use
these to poulate a contacts folder, is there an easy way to do this in
Outlook 2007?

Export the Sent Items folder to Excel, delete all info other than the contact details you require, re-import into Contacts.

There are several tools available that will scan an Outlook folder and pull
out all of the addresses in the recipient fields. Google can find them for
you.
