It depends on your ISP and what you want to do...
Most email offered through an ISP will be POP mail...
Some ISPs offer both POP and IMAP

Companies with in-house email servers often use IMAP

HTTP mail is Hotmail (or other similar service)...

Ask your ISP or look for their email setup page or FAQ.

POP mail is usually downloaded to your computer when you
read it (removed from the server) while IMAP leaves a copy
on the server so it can be read from more than one location
(computer).

HTTP is mail designed to be read from the web browser
(Hotmail, Yahoo mail, etc) and some of these can be read in
Outlook Express. Hotmail is quick and easy to setup in OE,
but Yahoo now wants money to read the free email in OE. You
can get YahooPops! to act as a server to feed Yahoo mail as
POP mail to OE.
