In Microsoft Outlook, only the sender's Display Name of
the original message is added to the body when a message
is forwarded. If the recipient wants to send mail to the
original sender, only the Display Name is available. In a
Microsoft Exchange Server organization, it is possible to
look up the address in the global address list; however,
if the original sender is outside of the Exchange Server
organization and has no custom recipient entry, it may be
impossible to find the e-mail address of the original
sender. How to display SMTP address in message body?
 
The recipient should always be able to see the full SMTP address of the
sender. Can you be more specific about what's happening here? The display
name is only a 'view' - depending on the mail client, if a recipient
right-clicks on the display name of the sender, goes to properties, they
should be able to see the full SMTP address - and should be able to reply
just fine regardless of client.

Is your recipient policy is not set up properly for your Internet domain?
You aren't using Internet Mail in Outlook to handle Internet mail, are you?
