1) My Windows File Explorer allows me to add Title, Subject, and keyword
data to the properties of each photo; but though there is a field called
Category, it won't let me add data to it. Is there a way to enable this?

2) The search engine in File Explorer allows searches by filename and words
in the file; but is there a way to use it to search the keyword, title or
category fields in the photo properties?

Please send any answers to me personally as well as to this group.

=================================
I don't have an answer for Part 1...

Part 2 is easy.

Open a folder that contains the image
files and left click the search button.

(Ctrl / F will also open the search panel)

Choose..."All Files and Folders"

Enter your, Keyword, Title, etc. in the...
"A word or phrase in the file" field and
left click the "Search " button.

FWIW...did you know if you use "Details
View" you can add your choice of columns.
Right clicking the columns bar....will open
a long list of options.
