Does anyone have any recommendations on software that will create a hard-copy
photo book? I've seen the websites from Shutterfly, and Snapfish but am
looking for something that provides for more flexibility/choices and control
of the photos that those web services.

Have you checked out Adobe's PhotoShop Album? (get it here:
http://www.adobe.com/products/photoshopalbum/starter.html ) ? You can
download a free starter edition, that let's you play around with it. I
already bought the full version because I liked the outputs and wanted
to get more options. Although the way how to work with the program is a
little bit confusing at a first glancce, and the layout and design of
the controls is definitely not targeted towards professional use, I can
recommend it doubtlessly.

DCall,

I have no experience with the software, but I'm curious how you would
print this book at home and bind it. Are you thinking of making a photo
book similar to the profesionally printed ones you find in book stores?

My sister and I have recently went through the creation of a book at
the Kodak services and had a really good experience. I found the number
of layouts to be sufficient for our needs. My parents were the
recipients of this photo book and were very happy receiving it.

I wrote a short article about our experience:
