Permanently changing display value in custom fields

I am in the process of creating a custom contact form for our company and am
having a problem with changing the display value in the custom fields. I
have gone into properties to make sure that no display value is defaulted. I
also have gone into the advanced properties and deleted the value there.
When I publish, the value returns. How to I get the value to disappear so
the form defaults to blank, with just a format rule? Any help would be
greatly appreciated. Thanks!

It's not clear what you mean by "display value" or "format rule." A control
bound to a custom field displays the data in that field, using whatever
format -- if any -- is set in the control's properties dialog. The right
place to delete the value for a field is on the All Fields page.

What I mean by that is that I created a number of fields that are displaying
"None" or "0" or "$0.00", for example. I formatted these fields to display
text, a truncated number, or a monetary amount, but do not want a default
value to display upon opening the form; these values are appearing in some
formatted fields but not others. I have tried to, in the design mode, change
the value in properties and advanced properties, but the values reappear when
I open the newly published form. Any thoughts?

Date/time fields display "None" when no date or time has been set. Numeric
and currency fields display 0. You can't change that built-in behavior.
