I happened to notice something in performance monitor that
is missing, the Network Interface counter is missing. It
appears to only be missing on the newer servers. I checked
an older machine running Windows 2000 and it had the
Network Interface counter. Is there a reason why Windows
2000 would not include this option, is there a way to add
this counter back in?

Check this registry value to make sure it was not disabled.

[HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Services\Tcpip\Performance]
"Disable Performance Counters"=dword:00000000

If set to 1, the counter is disabled.
