GSview has a 'text extract' function
http://www.cs.wisc.edu/~ghost/gsview/

You can also save pages as graphics files if there are images you
want.

Is there a version of XPDF for windows 2000
I thought that it was only a linux application

I used XPDF on Windows XP and on Windows NT
