We are looking to number pages S1 of 6, S2 of 6, S3 of 6, etc. Is there any way I can alter the format of the page number to include the S. We also need the S to show up in the TOC. Any ideas?

Yes to the first, no to the second (at least not easily). You can add any
static text you like to the page number in the header/footer pane (or even
to the framed page number inserted by Insert | Page Number, provided you
View | Header and Footer to access it), but this will not show up in the
TOC. If you have applied outline numbering to any heading level (Word's
built-in heading styles only), you can use "Include chapter number" in the
Format Page Number dialog to add this, but the problems with that approach
are that: (a) I doubt that static text, even if added as "numbering" would
be included, and (b) the choice of separators doesn't include "none" (you'd
have to settle for a period, dash, colon, etc.).
