Is there a way to have the "Display As" field in the
contact form default to the Person's name, as opposed to
the person's name with the email address in Parenthesis
 
Only by setting the "Display As:" field within the individual Contact
Records.

Look right underneath the Email field in the first page of Contact Record.
You can set the Display as: field to whatever you want it to be.
