Outlook should let me go-to a date 3 weeks from a specified date.

It would be helpful to schedule follow-up meetings and appointments, to have
a feature in which 6 months from now could be jumped to immediately. There
was a feature in a competitors product that also allowed you to calculate the
difference between two dates. This would also be great

You can do this in Outlook as well. While viewing the Calendar, click Go>Go
to Date and in the "Date" drop-down, type "6 months from now" or "six
months".
