Outlook replies in blue -- why?

Outlook newbie here. When I type a reply in Outlook, my text is in blue.
I do not want this; I explicitly told the system to compose my mail in
plain text. What gives?

Thanks. I'm not sure that answers the question, though, because when I
send a message in a blue font, the recipient also sees the blue. Which
means that Outlook is embedding font information in the message. When I
set the message format to plain text, I'm explicitly telling it *not* to
do that. How do I get Outlook to stop putting this crap in my messages?

By changing the font color, I'm just changing the color, not omitting
the font information altogether.

Why then do you make us read your rant regarding "putting this crap in my
messages?" As John M said, change the color to black coming and going.

Outlook always uses the format of the original message when you're replying.
Thus, you must be replying to a message that is Rich Text or HTML.
