Does anyone have a good source for information about the Notes feature in
and Exchange environment. I'm setting up a public Notes folder and would
like to do some custom stuff such as a template form and setting the color
based on who created the note.

There's not much to say about it. All the available properties are listed in the object browser. And notes don't support custorm forms, hence no script behind the form.

Thanks again for your information. One more question then, when I set up the
permissions on the exchange stickynote folder, I set up some people as
authors and some as editors. Does that even apply since the creator name
does not appear to be part of the record structure for stickynotes?

AFAIK, it applies. Just because Outlook doesn't expose it doesn't mean that a property doesn't exist at the base MAPI level.
