Outlook is trying to think for me again and getting it wrong (again!)

Please dear lord tell me there is a way to turn this off...
I recently composed an email using Microsoft Outlook (2003 SP2) that
was supposed to be a list of items, each on a single line.

line 2
line 3

Well, for some reason unknown to me, when the email was sent Outlook
reformatted my email and put all the individual lines into a single
paragraph with commas and spaces between them.

line1, line2, line3

NO NO NO NO NO!!! Not only did I never get a warning that this was
going to happen or a chance to reject these changes, but I wanted it
the way I freaking typed it! Is there an option buried in some
submenu preferences dialog that will turn this "feature" off? Is
there a way to turn off ALL of these little "features" that fall
broadly under the "auto-correct" heading? Please help before my head
explodes. :(

I've never seen Outlook do that in many yeats of use. If anything would do
it, Word would be the more likely culprit or some add-in that you're
employing.
 
it's the remove line breaks option - they weren't actually removed, just
turned off, if the recipient is using a version of outlook that supports
removing line breaks. you can change it for individual messages by clicking
the info bar or for all messages in tools, options, email options... remove
line breaks. Note that this affects only the mail in your mailbox - not
mail you send to others.
