Upon purchasing my new Dell over the holidays, I
was 'playing' with some features I hadn't before, and
experimented with the auto-reply features for OE. (You
know, the one where you're gonna be away from the email
for an extended time, and it automatically kicks back a
reply to that effect any time your address receives an
email). OK, now I CANNOT disengage this feature, and it's
driving me nuts, and is frustrating to those who send me
email regularly.

Are you refering to the option under Receipts: Always Send a Read
Receipt ? If not, could you be a little more specific as to where you
enabled it?
I've seen this on Yahoo Mail, but not in OE...
