Outlook doesn't work after AD rollout

I am going from a Peer-to-peer network to an Active Directory. After I add a
user's computer to the AD and copy the old local profile over the new domain
profile Outlook will not work. It just says "Outlook could not open" no
error is logged in event viewer either.

Any Ideas?

I would delete the profile and log back in to recreate the profile. Start
up Outlook and let if configure itself. Then log out and copy the old
profile folder contents(open user profile and select all) and the paste into
new profile folder.

That still didn't fix the issue. I went in and set her up as an Admin on the
local machine and it worked fine. Other things will not work as well, like
group policies were not working and her desktop settings would not work
(background, location of icons) I went in and gave her full access to her
profile under docs and settings and this still didn't work.

Just in case, in addition to the other suggestions, check your DNS
configurations on the clients and DCs. Make sure you just use your internal
DNS and not an ISPs. That can cause similar issues.

This is probably because, your outlook points to your old profile folder for
pst file to which your new domain user does not have permission. It happened
to me few month ago when I was migrating one network.
