Outlook contacts should be sortable by most recently used

When I enter a new contact into my Outlook contacts, I'd like if it were
automatically dated (like the "created on" field that files have). It would
also be nice if Outlook had an "last opened on" marker for contacts which
could then be used as a "sort by" option.

It is. Change your View to "By Category", right-click on the header line,
click Field Chooser, select "All Contact Fields" from the drop-down, and
drag the Created field to the header line.
It would also be nice if Outlook had an "last opened on"
marker for contacts which could then be used as a "sort by" option.

That, however, is not available. The closest you can come is the Modified
date field.
