on a traditional calendar you can take a pen and x-off the days, is there a
way to do this on the outlook calendar so it reflects the past as spent
days...??
 
No. If you use Outlook 2007 you could assign a color category called
'finished' and mark the items with the category as times passes. If its an
all day event, this will color the entire day.
