Outlook Calendar colour tags

I may not have headed this up correctly but here go's.

I have everyone sharing their calendars with the reception dept.

Most people have recurring meetings.

However I would like to change the meeting colour (Categories)to green to
show that the client has turned up. Red if they have failed to arrive.

At present if I do this it changes the whole series of recurring entries to
the desired colour.

Is there anyway around this or does someone have a better solution.

Outlool 2003 and 2007

Outlook 2003's colors were tied to the labels. Outlook 2007 doesn't have
labels. Its use of color is tied to categories. Labels are available by
occurrence. Categories apply to the entire series. You cannot assign a
category to a single occurrence, so there's no way to change the color of a
single occurrence.
