Outlook 2010 sending mail

I have Outlook 2010 on Windows 7 with a POP and IMAP email account. How can
I make my IMAP account the default mail for sending?
In the account settings my IMAP acct is set to default, I have even removed
both accounts and added them back without any luck.
 
Outlook will always reply with the account that you received the message
with. The default account is used when creating a new message.
The folder set of an IMAP account cannot be set as the default but you can
change the default startup folder to be the Inbox folder of your IMAP
account via;
File-> Options-> Advanced
 
I don't understand "File > Options > Advanced" I don't have that sequence
anywhere.
I am using 2010 Beta. With Outlook '07 my gmail account is my default for
sending new mail, is that no longer an option with Outlook '10?
