I just noticed that my calendar records are dropping off my main Outlook
calendar after two months or so, and they are not archived anywhere that I
can find. Is it possible to find those old records?

There are only a few reasons they would dissappear:

they are being archived (but you do not have the archive file open or are
just not showing it is the Navigation Pane)
they are being archived using the delete setting

So let's check:

Change to the Folder List view (bottom left corner of Outlook)
Right click the Calendar | Properties | Autoarchive tab. Check what your
settings are. If it is set to archive, note the file location. And you can
also turn off future archiving here.

You may find that using the Folder List view shows your Archive folders. If
not, do this:
do a search for *.pst files (and include Hidden files) to find the
archive.pst folder
Then open the archive.pst folder: File | Open | Outlook data file and browse
to the Archive.pst folder.
