How can I turn off SMTP extensions in my e-mail client? (e.g. to allow for
anti-virus programs like McAfee to scan outgoing e-mails)

It's a pure waste of time to scan outgoing mail. If you hade a vuirus, your
on-access scanner would have already detecetd it. You should refrain from
scanning inbound mail, too.
