Outlook 2003 user lost data

Ok, so I come in this morning and one of our engineers is in a panic.
Aparently he removed the Exchange Server Account (We're currently not using
exchange server here but using 3rd party email provider and pop3/smtp) from
his email account listings leaving just the pop3 mail account. Well
everything is GONE. He was left with not a single folder. No inbox, no
sent no nothing. The only backup we have is from when I transfered his
email to his new system 4 months ago. I have added a personal folder and
backed up what we had, but that still leaves 4 months of email gone.

Any idea's on getting his old email back? Where does outlook store the
email? Any help would be appreciated.

I'm confused. You say that the user removed the Exchange Server account, but
that you're not using Exchange server. That doesn't make a lot of sense.
What am I missing?
 
We have SBS 2003 Premium, which does indeed have Exchange. But it's never
been set up and currently everyone gets their email from outlook via Pop3
and sends via SMTP directly to our email hosting site. So, we are not using
exchange. But somehow this gentleman had an exchange server account in his
email.
