OUTLOOK 2003 - I deleted programs that maybe should not have been

A month ago I deleted (in Add/Remove) some programs I thought were not needed
and installed because I did not understand what they were used for. I was
seeing a lot of error messages that referred to Exchange. I am not hooked
into a company mainframe - just a lone PC at home.

As a result, I have really messed up my Outlook. I have tried reinstalling
Outlook and have gone to Update and nothing was 'found missing' - but it
makes no difference. Maybe I should completely remove it and then reinstall
it?

Problems include:
1. very long delay in the keyboard response when composing emails. I'll
type a sentence and wait 30 seconds before I see what I typed.
2. One Contact suddenly converted to what looked like Chinese chracters.
(My sister told me last year that an email she received from me that said
something about using another language).

I only speak English and did not install other languages when I installed
Outlook.
I have used Outlook for years and have upgraded from 2000 and possibly an
earlier version.
OS - Windows XP Professional

Would it help if I ran HighJackThis and let someone look at the results?
I am not an IT person, just a home office user. For example, Brian Tillman
said this in a response to someone and I don't understand it:
"Did you try Outlook's /resetfoldernames command line switch?"
