Clean install of Office 2003 Enterprise Pro on a Clean install of Windows XP Pro with known service and security patches applied. I'm adding a new email account for Lotus Notes to Outlook 2003 , so I choose Additonal Server Types and when the dropdown displays there are no additional server types i.e. MAPI, LDAP. Another laptop that I installed Windows XP Pro and Office 2003 Ent Pro (same cd) has these features. What can I do to utilize the Mapi function which allows connections to Lotus Notes.

You would need to install the MAPI provider from Lotus. Microsoft's connector works only for Outlook 2002, but a new version is coming.

LDAP would be added through address books, not email accounts.

That's what I suggested, iNotes being a MAPI provider for connecting Outlook to Notes. I haven't seen any reports on how well it works with 2003.
