When a message comes to me via an email account which is not my default and
I reply, the reply shows my default account instead of the account to which
the email was addressed.

I'd like to respond _from_ the account _to_ which a message was sent.

How can I do that?

TIA.

When you hit "Reply", in the message composition window, next to the
"Send" button, there should be an "Accounts" button. Choose the account
you want to send the reply from there.
