If I mark a contact as "Private", specifically what's synched with the
Exchange server; what type of privacy is provided if a Contact is marked
"Private"; can anybody see anything about the contact; can the system
administrator see anything about contacts marked "Private"? If I have
personal information in a contact marked private, what type of exposure do I
have as far as other people seeing the information? Thanks!

All the data is stored on the Exchange server. A system administrator may
have the ability to see any data in anyone's mailbox, but hopefully, your
organization has a policy on what access the admin can exercise.
