Does anyone know any way to look at a users sent items
folder without actually going on that users pc. Sort of
like some type of stealth mode.

Well there are really two questions here:

1. Can you do it technically? Maybe, if you have access to their mailbox
over a network you may be able to open their .PST file from where it's
stored. If you're on an Exchange server the mail administrator can give
themselves permissions to the mailbox to open such things.

2. Can you do it legally? Maybe. Depends upon what the laws on computer
privacy are in your location and whether or not you've done the right things
to allow yourself to legally monitor this person's communications.

Don't overlook question #2. There can be a whole load of ugly consequences
if you illegally access somebody's mailbox in some jurisdictions.

Of course there is also a moral question about whether or not it's proper to
read somebody's sent mail without their knowledge. Ultimately that's a
decision you'll have to make.
