Why do you think they are deleted?
Do they show up in the deleted folder or do they
just disappear?
Do you have auto archive turned on?
What version of Outlook are you running?
Without more information, I would guess that you have
filter view turned on that only allows you to view "unread"
messages (or appointments in this case which would be
only "active" appointments).
Open Outlook
Select your CALENDAR folder
Select the VIEW menu
And look around...
