Is there a way to show an item an appointment in a shared calendar as being
busy without everyone seeing why it is busy
 
You can use the "Private" sensitivity setting in the appointment.

- Open the appointment in Outlook
- Near the bottom right of the appointment is a little box that is titled
"Private".
- Turn on the check mark to select it.
- Save and close the appointment.

Now when someone opens you calendar or brings your free/busy up
to make an appointment, the free/busy will show that you are
"unavailable" for that time period, but it will not show the details.
