I've done all the compacting,deleting etc- I don't really have the time to sift through thousand of mails -can I back up & delete certain folders or can I only back up the complete personal folders?

It is telling you that in which way?
If it is via e-mail, then you'll need to empty your mailbox on the server
and not in Outlook.
Pst-files created in Outlook 2007 have a default limitation of 20GB; what
size is your pst-file now?
