Outgoing Mail Recipients

How do I change the outgoing mail recipients so only their Name shows NOT
their e-mail address? This should be relatively simple, but I haven't been
able to find where to change this.
 
Think of it as a good thing. Some recipients have more than one
email address, and this way you can double-check that you've
picked the right address.
