If you manage to remove their email address, the mail isn't likely to be
delivered at all. Windows Mail, unlike some previous email programs,
isn't set up to leave it there but not show it to you. If the mail arrives,
their email programs, not yours, control whether they can see their
address.

Windows Mail (and Windows Live Mail) will show both the contact name & the
contact email address. You can't change that.
If you send to multiple recipients, and don't want them to see each other's
email address, use the BCC: field.
If you don't see the BCC field, in the compose window, click on View - Show
All Headers.

If you used to put multiple email addresses in the To: or CC: fields in any
other email program, the recipients were able to see each other's address,
whether you saw it or not.

Unlike WM, WLM does not show the contact's email address
while composing the message.

Hello, how are you and can you tell me what is your name?

Which of the unknown number of people who read the newsgroup
you sent your message to do you want to answer?

WLM shows some of mine. After a bit of investigation, I found that if a
contact has more than one email address (home & work), then it will show
both the name and email address.

I agree that my WLM has the same behavior. It makes sense for
contacts with multiple email addresses.
