We have a recurring issue when an employee calls in sick
or something happens and they will not be in for that day
or numerous days at once.

The employee himself or other fellow employees are not
able to activate the missing persons "Out of Office
Assistant". Important emails then stay dormant and are not
adressed in an appropriate time.

Is there a way to turn on and edit another employees Out
of Office Assistant?

Hi,

By design the security on Exchange server will not permit anyone
enable/disable Out Of Office to others users.

Maybe you can think about a central point to receive calls and request to
the Exchange administrator enable/disable this feature to the users when
they were out.

Or an Exchange user can gives permissions on his mailbox to other co-worker
before he goes out.

regards,

Have an administrator log onto the users mailbox using outlook web access, you can set up the OFA from there.
