I am looking for backup software that can copy selected user files and
folders from one computer to another over the network. It would remember
what files and folders were selected, like normal backup software, but would
not compress the data and save it in a single file. Rather, it would simply
copy the files and folders to the remote destination. I have "Backup Utility
for Windows" by Veratas and MS and I can't find any setting to backup files
uncompressed. Any suggestions?

You can use a simple DOS batch file to copy specified files/folders
(or changed files/folders) Go to PC World web iste and look in their
utilities downloads. They have many different backup programs

You might want to give syncback a try from http://www.2brightsparks.com/

It's very versatile and you can define back-up tasks, run them
manually or automatically. The tasks are stored, can even be grouped
together and then run from a single call of the grouped task. Can
store bkps either compressed or uncompressed. Compressed files are
normal .zip format. It does work with a network if you've got your
share's defined. You fully define the what and where to where you
want the bkps stored. You also define what to do if source and bkp
don't agree.

There are 3 versions of the prgm. A free version, an upgraded version
for $12-15 (U.S.) and a third version with all the bells and whistles
for a little more. I've found the free version to do all I need but
was thinking on purchasing the up-graded version to help Co's like
this continue writing decent and useful prgms.

Syncback which someone else mentioned is good. I use that for keeping my
Favorites synced on desk/laptop.

You might also want to look at

Very capable and you can't beat the price.
