I click on various jpegs and windows media files to view and NotePad is what
comes up??? Of course I can't view the videos are whatever else might be
waiting to be viewed..

How do I tell XP that I never want notePad to be used to view videos? And
how in the world did things get changed to notepad??

There isn't any way for us to guess how the associations got changed.
