OL2010: Asign message to a categories in the "new message" screen

Hi,

The shortest way i know is to click options, then click on properties and then click on Categories and select the categories.

Do you know quick way to do the above?

Can i add to the ribbon of the new message screen the "Categories" button?
could you please specify the procedure step by step?

Categories are not available when you compose messages -its a privacy
feature as it would be sent with the message and the recipient will see it.
