OL 2007 Change default view for Tasks

[Seymour Views]

When I click on the Tasks shorcut in the Navigtion Pane it takes me into the
Tasks folder but always defaults to the "To-do List" view.
Is it possible to change this so that it defaults to the "Tasks" view, ie
the same view that I get when I click on the Tasks folder in the Folder List
when displayed in the Navigation Pane.

No. You can change the view on the to-do folder to only show tasks.
