I recieved a message from Windows Live Hotmail saying I must download Outlook
Connector by 9/1 in order to continue using my Outlook 2007 with my hotmail
account. While i'd like to continue t sync my with my messages online, what
if I don't want to sync my contacts online? Do I have a choice? There are
some contacts I would prefer not be shown online but rather stored only on my
personal computer.

You have at lest one choice, albeit imperfect (since it doesn't "sync").
Start using a POP account. See this:

Make a second pst and keep these contacts in it - if you have outlook
already configured for another account, do nothing - the hotmail account
will not sync with other folders, only the ones created by the connector.
