How can i make it where the user doesnt have to enter the Product key when
Office installs from a GPO. I went through the CIW from the office resouce
kit but it didnt have the option to type in the key.

Try using an administration point installation on your server & build your
mst off that. The admin point integrates the product key & you never need
worry about it ever again for any installations from that point. Here's a
link to the XP documentation - should hold for the 2k version too.
