PDF files have an icon like files which are not known for Windows.
It´s not a problem to open pdf documents, I linked .pdf files to
Acrobat Reader.

How can I add this icon to .pdf files? Registry hacking, or whatever, I
am ready for every hint :)

In Control Panel Folder Options or from Windows Explorer Tools>Folder
Options click File Types tab select the file type then click Edit and
you will see Change icon...

I see this same exact problem on my machine. Whenever I try to change the
icon back, it only lasts to next boot. However, it doesn't really bother me
since .pdf files still launch properly.

Replace
"C:\Program Files\Adobe\Acrobat 5.0\Acrobat\Acrobat.exe" "%1"

in registry with
"C:\Program Files\Adobe\Acrobat 7.0\Reader\AcroRd32.exe" "%1"

Maybe it is Acrobat 6.0 or 4.0, but you have to replace it with the
current version.
