That's easy. (This applies to outlook 2002)
1. Create a new Contact. Type "Boss" in lastname field.
2. Enter correct Email address for the boss in Email
field.
3. In Display as field (under Email address), type
anything you want to see in the To field, in this case,
type "Smith, Peter" (do not use quotes). Save the Contact.
4. To send an Email, open blank Email, type "Boss" in To
field. Add subject and text. Click Send. In your
Outbox the Email will list "Smith, Peter" in the To
column. When you open it, "Smith, Peter" will display in
the To field.

You don't say what version of Outlook you have. Also, do you have
your own address book, or is this a company-wide address book?

I have 2000 and I'm using it at home, no company address book. You
might have to do something different if "Smith, Peter" is in the
organization-wide address book.

There is a Nickname field, but for some reason I can't see it or edit
it in Contacts, so this is how I get to it:

1. Create a new email.
2. Type "Smith" in the To field,
3. Press Ctrl-K to check the addresses.

4.a If you probably have more than one Smith, select Peter and then
click Properties. This brings up the Properties window.

4.b If you have only one Smith, then Outlook will automatically put
this contact in the To field. Double click on the contact to bring up
the Properties window.

5. Click the Name tab, and enter a nickname in the Nickname field.
