There is. The way I told you works, but you aren't using it. You are
using autocompletion instead, which has nothing to do with your Contacts.
It is taking its data from the autocompletion cache, which is using the
address format you last used.
Select your recipient from the Outlook Address Book or Contacts Folder if
you want Outlook to use the Email Display As field.

If you configure the Email Display As field for the Contact you are
selecting as the recipient to show only the familiar name, that's all
you'll see in your To: field. Recipients may or may not see only the
familiar name.

Is there a way in Outlook 2007 when creating a new message to only
have it show the contacts name in the To: box rather than the name and
e-mail address?
